Wild Albacore Tuna Garden Salad

Ingredients:

1 can (150 gr/5.3 oz) RAINCOAST TRADING albacore tuna, drained

1 small head butter lettuce

2 hard-boiled eggs, sliced

1 cup (250 ml) green beans, cooked & cooled

1 medium carrot, grated or ribboned

6-8 yellow or red grape tomatoes

¼ cup parsley, chopped

4-5 baby potatoes, cooked, cooled & sliced or cubed

Italian or vinaigrette dressing

 

Preparation:

- Place butter lettuce in bottom of serving bowls (one for each guest)

- Divide vegetables into portions

- Layer potatoes, green beans and carrots in the center of each bowl

- In a separate bowl, flake tuna with a fork

- Top vegetables with tuna and garnish with parsley 

- Place alternating slices of hard-boiled egg and grape tomatoes around the bowl

- Pour dressing over the salad
