Wild Albacore Tuna & Artichoke Salad

Wild Albacore Tuna & Artichoke Salad

Ingredients
  • 1 gr can (150 /5.3 oRAINCOAST TRADING Wild Albacore Tuna drained
  • 2 tsp (10 mbalsamic vinegar
  • 2 Tbsp (25 mmayonnaise
  • 1 tsp (5 mlemon juice
  • 1 gr can (142 /14 oartichokes drained
  • 2 medium green onions sliced
  • 2 Tbsp (25 mpitted black olives sliced
  • 3 leaves fresh basil chopped
  • 3 fresh or sun-dried tomatoes sliced
  • Salt (optionaand pepper to taste
  • One head butter lettuce or romaine lettuce
Instructions
  1. In a medium bowl, mix together balsamic vinegar, mayonnaise and lemon juice
  2. In a separate bowl, flake tuna with a fork
  3. Cut each artichoke heart into 4 pieces
  4. Combine ingredients and toss gently
  5. Add salt & pepper to taste
  6. Arrange the mixture on a bed of lettuce
